This post is also available in german/deutschThese delicious little Quark ball donuts are perfect for New Year’s Eve, Carnival and whenever you feel like it. Nice crunchy on the outside, airy on the inside and nibbled within a few seconds. In contrast to Berliners, these quark balls don´t consist of yeast dough but of a simple batter. They are rolled in sugar cinnamon and eaten without filling.
Quark ball donuts
For the dough:
300 g flour
250 g quark
2 tsp baking powder
70-100 g sugar
30 ml sparkling water
50 ml oat milk
Additional Ingredients:
1 l Oil for deep frying
150 g sugar
1-2 tbsp cinnamon
Combine the dough ingredients. Rest for 10 Minutes.
Form with 2 tsp dough into balls or use floured hands it´s a bit easier. Because the dough is sticky.
Heat the oil in a medium size pot or deep fryer. Fry each Quark Ball for 3-4 minutes golden brown, turning to make sure all sides brown nicely.
Place fried donuts on paper towels to absorb excess oil. Allow to cool.
Roll the finished Quark Ball Donuts in sugar cinnamon mix.

What can I use as a “quark” substitute? Is it like yoghurt? I am vegan, so what would be suitable?

Vegan Quark.
Put about 700 g of vegetable yogurt (soya) in a sieve lined with a cheesecloth and let everything drip overnight / 12 hours. That should give about 500 g of curd.
