Happy New Year Lovelies! We hope you had an fantastic start into the new year? Lets begin with super delicious vegan Cheese Biscuits and topped with a mix of warm butter garlic rosemary mix! mhhh what a flavor combination. The biscuits are so soft and tender.
We need for this bad boys vegan buttermilk. Its super easy to make it at home. You need Soy Milk and apple vinegar. That´s it. Let it rest for 1o minutes ans the soy milk will be lumpy a bit and that`s what we want.
Step by Step Guide
Ingredients for vegan cheese biscuits
320 g all-purpose flour
2 tbsp baking powder, 15 g
1 tsp salt
110 g unsalted butter, very cold and cubed
265 ml + 2 tbsp for brushing, cold vegan buttermilk, mix soy milk with 1 tbsp vinegar and let it rest 10 minutes
125 g shredded vegan cheese
pepper
1 tbsp fresh chopped rosemary
Topping
30g butter, melted
1 garlic clove, minced
1 tsp parsley and rosemary, chopped
Directions:
Preheat oven to 218°C.
Place the flour, baking powder, and salt together in a food processor. Puls until combined. Add the cubed butter and pulse until coarse crumbs form. Add the mixture into a large bowl.
Stir in the cheddar cheese. Pour buttermilk on top. Stir everything together until just combined– don´t overwork the dough. The dough will look like crumbly and a bit moist.
Turn the dough out onto a lightly floured work surface and gently mold it into a rectangle using your hands.
Fold one side into the center, then the other side. Turn the dough so it’s long horizontally. Gently flatten.
Repeat the folding again. Turn the dough so it’s long horizontally once more. Gently flatten. Repeat the folding one more time.
Gently roll the dough out with a rolling pin until it’s about 1/2 inch thick. Cut into 3-inch circles. Put the biscuit cutter in flour, its easy to handle and no dough will hang on the cutter. Re-roll any scraps until you have 9-12 biscuits. Arrange in a 10-inch cast iron skillet. (Make sure they’re touching.)
Brush the tops with remaining vegan buttermilk.
Bake for 15-25 minutes until biscuits are golden brown on top.
Remove from the oven. Combine topping ingredients and brush over warm biscuits. Enjoy biscuits warm.

- 1 tsp rosemary chopped

What vegan butter do you use? The only thing I can find is an olive spread
Hi, you can use margarine. Or maybe olive spread, it could work too.
