Ultimate Pink Strawberry Cake Recipe

This post is also available in german/deutsch.pink Strawberry CakeToday there is something nice for the eyes and the taste buds. A fruity pink strawberry cake that not only looks pretty but also tastes delicious.

The pink cake consists of a simple sponge cake with a drop of pink food coloring. Depending on the intensity, you can add more or less. Most of the time, however, a pin size is really enough.For fruit powder, it may be that the fare fades when baking, but you may like to stir some strawberry flavor or powder under the dough.

Strawberry Frosting
So fix and tasty. This Strawberry frosting is so quick and tasty and is made from dried strawberries. You can get that in every well-stocked supermarket. Then powdered sugar and butter and vanilla.

to bake
You can bake the cakes in a 20 cm springform pan, but you have to slice the cake later with a saw blade.
Or you bake the dough in 3 x 18 cm ø Springform. Advantage you do not have to cut the cake.

Pink Strawberry Cake

dough
400 g of wheat flour
450 ml of milk (oat or soy milk)
100 g butter (melted)
100 g of sugar
1 tsp vanilla extract
1 packet (15 g) of baking powder
2 tbsp apple cider vinegar
strawberry flavor
1 drop of pink food coloring
filling
1 cup freeze-dried strawberries
224g unsalted butter, room temperature
450 g powdered sugar
50 ml water, if needed
1/2 tsp vanilla extract
Pinch of salt
Serve
Fresh strawberries

3 x 18 cm or a 20 cm springform (see text above)

Preheat the oven to 180 ° C and line out springform pan (s) with baking paper and grease the rim.
In a large measuring cup mix the milk and the vinegar. Set aside for 10 minutes. This creates vegan buttermilk.
In a large mixing bowl, mix the flour, sugar and baking powder.
Add the melted butter, vanilla and buttermilk to the dry ingredients and mix.
Add a small drop of food coloring to the dough and stir gently under the dough.
Pour into the prepared springform pan and bake on the middle rack for 35-40 minutes (one tin)  (25-30 minutes if you use three tins). If a skewer comes out clean the dough is ready.
If it turns dark during baking, cover with baking paper.
Allow the cake to cool completely. If necessary, cut twice so you have 3 dough circles.

Add strawberries to a food processor and grind into a fine powder. Set aside.
Add the butter to a large mixing bowl and beat until smooth.
Then add about half of the powdered sugar and beat until well combined and smooth.
Add the strawberry powder and about 3 tbsp of water and beat until well combined and smooth.
At least the vanilla extract and slowly add the remaining powdered sugar and beat until well combined and smooth.

Stack and fill the cake with the filling and 1 tbsp of strawberry jam. Place the second cake slice on top. Put some more filling, the jam and then the last cake slice on top. Now brush the cake completely with the filling.
