Peanut Butter Cups

This post is also available in german/deutsch.Peanut butter cupsSweet, “healthy” and packed with yummy peanut butter! Delicious peanut butter cups with chocolate. I love this combination and peanut butter is my (Kathrin) favorite nut butter ever. Unfortunately, there are often a variety of ingredients in purchased peanut butter cups that you don´t need or want to eat. For this recipe you only need 5 ingredients: natural 100% peanut butter, dark (dairy free) chocolate, coconut oil, maple syrup or honey and a pinch of salt.

Peanut butter cups

Peanut Butter Cups

130 g dark chocolate chips (vegan)
1 tbsp coconut oil, melted
filling
100 g natural peanut butter
3 tbsp maple syrup or honey
2 tbsp coconut oil
sea-salt

Place 6 paper forms in the muffin tin.
Melt the chocolate with the coconut oil für 1 minute in the microwave. Stir.
Put 1-2 tbsp of melted chocolate to cover the bottom of the liner. Place in the freezer for 5 minutes.
Add peanut butter, coconut oil, maple syrup and pinch of salt in a saucepan and heat. Or put in the microwave for 15 seconds. Stir to combine.
Now pour peanut butter mixture over the frozen chocolate and place in the freezer for another 5 minutes.
Then pour remaining chocolate over each peanut butter layer and place back in the freezer for about 30 minutes. Sprinkle with sea salt.
Once cups are firm, you can store them in the fridge (5 days) or freezer (1-2 month) until ready to eat.

Notes

  1. Take them out 5 minutes out of the freezer before serving. Because they´ll be pretty hard.
