Pancakes and not just for the weekend – at present I could eat them almost daily and they are also made really fast. You can be creative and directly add tasty spices to the day. I mostly use this basic banana pancake
I like to eat the pancakes with lots of fruit, nut butter and maple syrup.
You can also use lemon zest or roasted sesame. But use only untreated organic fruits, which is very important when using the peel.
Orange Poppy Seed Pancakes (vegan)
- 1 ripe banana mashed
- 200 ml almond milk
- 120 g flour
- 1 tsp baking powder
- 2 Tbsp poppy seeds
- pell of a half Orange
- Whisk all ingredients in a large bowl. or add it into a blender.
- Pour into a non-stick pan and fry the pancakes on medium head until golden.
- Top with berry compote, tahini drizzle and coconut rasp.
