Hi friends, summer comes slowly to an end and what fits perfect for this season? Yes Yummy curd and cassis rolls. The dough is super fluffy and the filling moist and juicy.
Moist and fluffy Curd and Cassis Rolls
INGREDIENTS FOR JUICY curd AND CASSIS Rolls
345 g of flour
1 packet of yeast
2 tbsp sugar
40 g of butter, room temperature
180 ml of milk of your choice
Filling:
250 g vegan curd
2 tbsp powdered sugar
Lemon zest + juice of 1/2 lemon
2-3 tbsp raisins, Optional
3-4 tbsp Cassis jam or jam of your choice
METHOD
Mix the flour, yeast, sugar and salt in a bowl.
Heat the milk and butter in a small saucepan. (Do not over heat, otherwise the yeast will break.)
Butter milk mixture to the flour mixture and knead into a smooth dough.
The dough should be detached from the bowl.
Cover and let rest in a warm place for 60 minutes. Roll out the dough on a floured surface to a rectangle. Quark with powdered sugar, lemon juice + rub off.
One half of me quark spread the others with jam. Who likes to spread the raisins on the cottage cheese? Roll up and cut off equal sized slugs.
Put in a square or round greased shape with a little distance and let rest covered for 70 minutes.
Preheat the oven to 190 degrees Celsius and bake the quark and cassis slices golden for 25 minutes.
Mix the icing sugar with lemon juice and brush the slices with it.
The snails taste best on the same day.
