I love the flavor and smell of freshly buckwheat baked banana bread. Sweet and tasting of caramel. Soft and juicy. Likewise, I love banana bread. Sometimes it gets too tight or too dry, but this one is just right; airy and still juicy. In the beginning, banana bread was a love-hate relationship for me. Countless attempts have become nothing, but now the love for it is all the greater. Whether with chocolate, nuts, tahini or just solo I love banana bread. Buckwheat Banana Bread | vegan
Ingredients
- 3 very ripe bananas mashed
- 240 g buckwheat flour
- 1 packet of baking powder
- 1 tsp baking soda
- 2-3 tbsp brown sugar
- 80 ml plant based milk
- 1 tsp cinnamon
- 60 ml oil
- 1 tsp vinegar
- 150 g yogurt vegan
Instructions
- Preheat the oven to 180 ° C and grease a bread baking pan (22 cm).
- Mix all dry ingredients.
- Mash bananas with a fork mix with vinegar, milk and oil.
- Add to the flour mixture and mix well with the hand mixer.
- Add to the baking dish and bake for 45 minutes.
- Allow to cool for 15 minutes in the mold and allow to cool completely on a grid.
