I love the flavor and smell of freshly buckwheat baked banana bread. Sweet and tasting of caramel. Soft and juicy. Likewise, I love banana bread. Sometimes it gets too tight or too dry, but this one is just right; airy and still juicy. In the beginning, banana bread was a love-hate relationship for me. Countless attempts have become nothing, but now the love for it is all the greater. Whether with chocolate, nuts, tahini or just solo I love banana bread. On my blog you will find even more banana bread variations. So if you have ripe bananas in the house, get to the recipe and you only need 10 minutes to prepare. Enjoy the meal.

Buckwheat Banana Bread | vegan

This buckwheat banana bread is moist and fluffy. The recipe of this banana bread is easy to made and good to use your very ripe bananas.

Ingredients

  • 3 very ripe bananas mashed
  • 240 g buckwheat flour
  • 1 packet of baking powder
  • 1 tsp baking soda
  • 2-3 tbsp brown sugar
  • 80 ml plant based milk
  • 1 tsp cinnamon
  • 60 ml oil
  • 1 tsp vinegar
  • 150 g yogurt vegan

Instructions

  • Preheat the oven to 180 ° C and grease a bread baking pan (22 cm).
  • Mix all dry ingredients.
  • Mash bananas with a fork mix with vinegar, milk and oil.
  • Add to the flour mixture and mix well with the hand mixer.
  • Add to the baking dish and bake for 45 minutes.
  • Allow to cool for 15 minutes in the mold and allow to cool completely on a grid.
