With spelt flour, brown sugar, sliced almonds and vanilla. The two berries give the blondies a delicious fruitiness. I love this recipe because it’s really easy to make and is super tasty. Also, the Blueberry Blondies are outstanding when guests come. You should definitely try these yummy blondies.Blueberry Blondies
145 g spelt flour (type 630)
20 g of corn starch
1 tsp baking powder
1/2 tsp salt
180 g of brown sugar
125 ml extra virgin olive oil
2 eggs
1 tsp vanilla extract
50 g frozen blueberries
50 g blackberries
sliced almonds
Powdered sugar, for deco
Preheat oven to 180 °C. Grease an 8×8-inch square baking pan, and line it with a parchment paper.
In a large bowl, whisk together the spelt flour, corn starch, baking powder and salt. In another bowl, whisk together the olive oil and sugar, whisk in the eggs and vanilla until combined.
Add the dry ingredients to the wet and stir to combine. Spread the batter evenly into the corners and sides of the pan.
Scattering the berries and sliced almonds all over the top of the blondies. Bake 30-35 minutes or until a toothpick come out mostly clean.
Let the blondies cool on a rack. Once completely cool, remove the blondies from the pan.
Dust with powdered sugar and slice into squares.
