This post is also available in german/deutsch.Healthy snacking with these delicious apple amaranth muesli bars it´s just so easy. These muesli bars are easy to make and come out thanks to dried fruit and apple with no added sugar. Healthy rolled oats, amaranth, nuts and seeds are in these bars also.Perfect for the office as a lunch snack, for the university, while hiking or just at home. If you do not like raisins you can replace them with cranberries, dried cherries or other dried fruits.
Apple amaranth granola bar
100 g dry fruits (for example apricots, figs, plums, dates)
100 g raisins
100 g nuts (almonds, walnuts, hazelnuts)
50 g sunflower seeds, roasted without fat
145 g of oats
150 g spelt flour
1/2 tsp baking powder
50 g puffed amaranth + more to sprinkle
1 tsp cinnamon
1/2 organic lemon (juice + abrasion)
4 tbsp of coconut oil, melted or sunflower oil
2 apples
a baking dish or a baking sheet, depending on the thickness of muesli bars
Chop the dried fruits roughly and place them together with the raisins in a bowl and pour over 125 ml of boiling water and allow to swell for 30 minutes.
Finely grind the nuts in a blender.
Mix the flour with the oats, baking powder and cinnamon in a large bowl. Add the dried fruits + soaking water. Add nuts, sunflower seeds and the amaranth to the bowl and mix well.
Wash the apples, remove the core and grate roughly. Then stir together with the coconut oil, lemon juice/zest and rubbing under the dough. The dough should be supple and not too dry.
Preheat the oven to 180 ° C. Grease a baking tin and lay out with parchment paper. Put the dough into it and smooth it with a wet spatula.
Sprinkle with Amaranth and bake on the middle rack for 25-30 minutes.
Let the dough cool for 5 minutes and then cut into bars.
Let cool on a grid.
