Tomatoes, peppers, cucumbers, various herbs and flowers for the bees and butterflies. Today we will share a super delicious and simple dessert: Fluffy chocolate mousse with only 3 ingredients!This vegan chocolate mousse is a chocolate lover dream. And it´s made with only 3-ingredients. The aquafaba gives the most light and fluffy texture. The dessert is quick and easy to make.
What is Aquafaba?
Aquafaba is the fancier name for chickpea cooking water. Yes you hear it right. It can be whipped like egg whites and used to hold together cakes , waffles and more…like egg whites.
Chocolate mousse
3 jars
- 1 can of chickpeas (400g and drained weight 250g)
- 140 g dark chocolate
- 2 tbsp sugar, optional
First, put the chopped chocolate in a small bowl and let it melt in the microwave or above the water bath. Stir with a spoon and set aside.
Now you put the chickpeas in a sieve and catch the chickpea water in a large measuring cup.
Make sure that the bowl / measuring cup and the whisk are fat-free. If not, the Aquafaba will not open properly. Mix Aquafaba and sugar (optional) with a hand mixer or in the food processor until the mixture is very stiff and you can use it to make sharp points. It takes about 5 minutes in the blender and 8-10 minutes with the hand blender.
Now lift the slightly chilled chocolate under the whipped mixture. Do not worry, it’s normal when the mass collapses.
Divide the chocolate mousse into 3 glasses and leave to set in the fridge for 2 hours or overnight.
Serve with (coconut) whipped cream, raspberries and pistachios before serving.
Perfect vegan Chocolate Mousse
Quality chocolate, aquafaba and sugar. Use the best chocolate because all the flavors comes from it. So use your favorite chocolate. Dark or vegan milk chocolate what do you like.
