Walnut cake with sunflower seeds | moist & vegan recipe

Because we have delivered most of our project for 2020. I can also look forward to something really great in August 2020. But more was not revealed at this point.walnut cakeThis simple walnut cake contains valuable ingredients and healthy spices, like cinnamon, nutmeg and cloves. I once made the cake vegan and once with eggs. Both results have convinced. So if you have no eggs at home, you can also use ground flax seeds or ground chia seeds.

We think the cake tastes better the next day.Walnut cake with sunflower seeds
80 g sunflower seeds
60 g of walnuts, roughly chopped
140 g vegan butter, liquid
2 tsp of baking soda
150 g spelt flour (Type 1050)
1 tsp cinnamon
Pinch of ground cloves
Pinch of ground nutmeg
sea-salt
2 tbsp of ground flaxseeds
100 ml oat milk
100 g of brown sugar

1 box shape

Soak the sunflower seeds and walnuts in water for 6 hours or overnight.
Preheat the oven to 180 ° C.
Mix flaxseed with 6 tablespoons of water and let it rest for 10 minutes.
Grease the box shape and cover with baking paper.
Strain the soaked nuts and seeds.

Now mix the flour, baking powder, spices, salt and sugar in a large bowl.
Mix the butter with the milk and add to the flour mixture together with the flax eggs and the soaked seeds/nuts.
Carefully mix everything with the spatula and then put the dough into the box.
Bake in the oven for 45-55 minutes.
Check with a wooden stick if the cake is ready. If there is still some dough, bake for a few minutes more.
Allow to cool on a wire rack for 10 minutes and then carefully remove from the mold.
Allow to cool completely before cutting.

This delicious and moist walnut cake with sunflower seeds is a simple sponge cake. With tasty spices like cinnamon.
