For a long time I have not eaten rice pudding and completely forgotten how good it tastes.
Rice Pudding. Hug in a bowl
INGREDIENTS FOR VANILLA RICE PUDDING WITH COMPOTE
80 g rice pudding
320 ml oat milk
pinch of salt
1 tsp Bourbon vanilla extract or 1/2 scraped vanilla pod
compote
200 g plums, pitted and quartered
200g frozen blueberries or fresh blueberries
50 g of sugar
Zest of 1/2 organic orange
1 tbsp of orange juice
5 buds of lavender flowers
1/2 tsp cinnamon
1 tbsp chia seeds
METHOD
Put rice, milk, salt and vanilla in a saucepan and bring to a boil. Simmer gently with occasional stirring for 25-30 minutes. Possibly add a little more milk depending on the desired consistency.
Caramelise the sugar for the compote.
Add fruits, orange juice and spices, stir and simmer for 8 minutes. After the cooking time, stir in the chia seeds and let them soak for 10 minutes.
Serve rice pudding with compote.
