Tomato Pepper Pasta Sauce | easy & quick recipe

Tomato pepper pasta sauce
1 yellow pepper, thin strips
1 carrot, diced
200 g of white beans from the tin
3-4 medium sized tomatoes, quartered
2 cloves of garlic
1 onion
Pepper salt
3 stems of thyme sprigs
1 bay leaf
Pinch of nutmeg
Pinch of cinnamon
Pinch of Cumin
3 tbsp tomato paste
2 tbsp olive oil
1 tb of sunflower oil
2 tbsp olives
180 g of pasta

Cook pasta in salted water al dente and set aside some cooking water.
Cut onion, garlic and vegetables.
Fry onions, garlic in oil. Add the thyme and carrot cubes and stir-fry. Then fry tomato paste and a pinch of sugar for 2 minutes. Deglaze with some pasta water. Then add the peppers, tomatoes, beans and spices. Cook gently for 3-5 minutes and then season with salt. and add some olives.

Put the pasta in a bowl and pour enough sauce over it.
