Today, there is a healthy green pea pasta with tomatoes, olives and green beans. The green pea pasta is from 100% peas and is naturally gluten-free. So it is an ideal pasta for those who don´t tolerate gluten.
Green Pea Pasta
125g Green pea Penne
1 onion
2 spring onions
70g green beans
60g frozen peas
80g olives
2 ripe aromatic tomatoes
1 clove of garlic
sea-salt
black pepper from the mill
4 tbsp olive oil
1 tbsp flour
4 tbsp dry white wine
60 ml vegan cream or cream
some fresh rosemary
fresh thyme
fresh basil
1 chili pepper
coriander seeds
tomato flakes
some water
Method:
Cook the green pea penne al dente and set aside.
Heat the olive oil in a saucepan and fry the chopped onions, garlic and finely chopped thyme and rosemary in it. Pepper and salt and add the flour, sauté briefly. Then deglaze with the wine, add some water. Then add the cream and stir in the blanched beans, the thawed peas, the olives, the ground chilli, coriander and tomato flakes.
If necessary, add a little liquid and season again.
Remove from heat and stir in finely chopped leek onion rings and tomato strips.
Now mix with the dripped penne.
Arrange on a beautiful plate and decorate with fresh basil leaves.
