When the temperature rises and your appetite for something light and fresh calls, then it´s time for our favorite rice noodle salad. Crunchy, colorful and with a creamy peanut butter sauce. In addition, there is a soy dressing with finely chopped spring onions. We trickle the soy dressing in the end over the salad. Mhhh just so good. And for all peanut fans, give your salad an extra crunchy booster of chopped roasted peanuts.Rice noodle saladCrunchy vegetables

Of course you can also vary in the ingredients. This is just our favorite combination and we think it fits all together deliciously. Sometimes we swap 1-2 ingredients, depending on your mood. Zucchini instead of cucumber or celery. I know some people don´t like coriander, that`s not a problem, you can also use parsley as an alternative.

This salad is perfectly for hot summer days, for your lunch at work, take it to your picnic or enjoy it on your balcony or in the garden. We have lots of healthy ingredients, good fats from the nuts, vitamins and carbohydrates.

Rice noodle salad with peanut butter sauce

Fresh and light rice noodle salad with peanut butter sauce. Perfect for the hot temperatures. The rice noodle salad is vegan and ready in under 30 minutes.

  • 120 g rice noodles
  • 1 medium carrot
  • 1 garden cucumber
  • 1 red pepper
  • 1 green medium hot pepper
  • Coriander chopped

Peanut butter sauce

  • 60 ml crunchy peanut butter 1/4 cup
  • 2 tbsp sesame oil toasted
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1/2 tsp ginger grated
  • 30 ml of water may be more depending on the consistency
  • 30 ml of orange juice


  • 2 tbsp soy sauce
  • 1/4 tsp brown sugar
  • 1/2 tsp rice vinegar
  • 1/2 clove garlic finely chopped
  • 1 tsp lime juice
  • 1 spring onion white part


  • Coriander chopped
  • roasted peanuts



  • Cook rice noodles according to the package instructions.
    Drain and place in a bowl.
    Cut carrots, cucumbers and red peppers into thin strips.
    Cut medium hot peppers into thin rings. Mix vegetables with the rice noodles.

Peanut butter sauce

  • Put all ingredients in a bowl and stir well


  • Mix all ingredients in a small bowl.


  • Mix rice noodle salad with peanut butter sauce and serve on plates.
  • Garnish with peanuts and more coriander and drizzle with the dressing.
