The weather suddenly turned cold and I got to dig out my extra blankets for our winter time bed. And it`s time for a warm and nourishing breakfast. Warm my belly and my soul. PORRIDGE!
I love oat porridge and recently I’ve discovered corn porridge for me. So delicious.

Polenta Porridge
Servings 2
Ingredients
- Porridge
- 1 cup cornmeal
- 1 cup water
- 1 cup plant based milk oat milk
- maple syrup
- salt
- Compote:
- 1 cup berries
- maple syrup
- nut butter
- tahini
Instructions
- Porridge:
- Combine all the ingredients in a pot and bring the mixture to a boil. Once it boils, turn it down and let simmer for 15 minutes, stirring often, or until the corn are cooked. Divide the polenta porridge between two bowls
- Compote:
- Add berries in a small pot and bring to a simme and let cook for for 5 min. Stir.
- Pour over porridge and finally, drizzle the porridge with nut butter, tahini and maple syrup.
- Enjoy!
Today I bought my first tulips after Christmas. And I love it so much. Every year after the christmas tree is gone, I buy tulips. It´s a ritual.

The recipe is for polenta porridge but in step 2 you mention cooking until the oats are done, and dividing the oatmeal into bowls. The recipe doesn’t call for oats. Could you review the recipe and clarify step 2? Thank you.
