The weather suddenly turned cold and I got to dig out my extra blankets for our winter time bed. And it`s time for a warm and nourishing breakfast. Warm my belly and my soul. PORRIDGE!
I love oat porridge and recently I’ve discovered corn porridge for me. So delicious.

Polenta Porridge
Servings 2
Ingredients
- Porridge
- 1 cup cornmeal
- 1 cup water
- 1 cup plant based milk oat milk
- maple syrup
- salt
- Compote:
- 1 cup berries
- maple syrup
- nut butter
- tahini
Instructions
- Porridge:
- Combine all the ingredients in a pot and bring the mixture to a boil. Once it boils, turn it down and let simmer for 15 minutes, stirring often, or until the oats are cooked. Divide the oatmeal between two bowls
- Compote:
- Add berries in a small pot and bring to a simme and let cook for for 5 min. Stir.
- Pour over porridge and finally, drizzle the porridge with nut butter, tahini and maple syrup.
- Enjoy!
Today I bought my first tulips after Christmas. And I love it so much. Every year after the christmas tree is gone, I buy tulips. It´s a ritual.
