This post is also available in german/deutsch.We have a big love to citrus fruits! And this moist and delicious orange almond cake is our favorite. With creamy vegan orange whipped cream.
Orange almond cake
dough
160 g all purpose flour
90 g blanched ground almonds
150 g vegan butter, melted
90 g sugar
120 ml citrus juice (mix of blood orange, mandarin and orange)
2 tsp baking powder
1 tbsp vinegar
1 tsp baking soda
Abrasion of a organic Orange
serve
150 ml cold oat cream / soy cream / whipped cream
optional: 1 tbsp sugar
Preheat the oven to 180 ° C. Grease a 20 cm cake pan and dust with flour.
Mix the flour, ground almond, baking powder, orange peel and sugar in a mixing bowl.
Add butter, orange juice, baking soda and vinegar and mix quickly. Don`t over mix!
Place the dough in the cake pan and bake for 40 minutes. (Make a toothpick sample) If you still have some dough on in, bake for another few minutes until it’s done.
Let cool in the baking pan for 10 minutes and then allow to cool completely on a wire rack.
Beat the cold cream with sugar and spread the cake over it or decorate it with a piping bag.
Garnish with some grated orange peel.
