This Lemon yogurt Cake is one of my favorite cake. I love the smell of this beautiful citrus fruits, her yellow color and her shape. I think she is perfect in my eyes. The cake is fluffy but also moist and it tastes lemony. yummy.
This lemon yogurt cake is:

Cake
190 g of flour
1 tsp baking powder
1 egg vegan: 2 tablespoons cornstarch or 75 ml applesauce
1 tsp lemon zest
25 ml lemon juice
100 g greek yogurt or vegan variant
135 g of sugar
90 g of sunflower oil
1 tsp vanilla extract
optional glaze
150 g of powdered sugar
2 tsp lemon juice
also
18 cm springform
Preheat oven to 175 ° C. Lay out the springform baking tray with baking paper and grease the edge well.
In a bowl, mix flour with baking powder.
Mix the egg, yogurt, sugar, oil, vanilla, lemon juice and juice in a separate bowl with the whisk.
Stir flour under the yoghurt-egg mixture and fill in the springform pan.
Bake in the oven on the middle rail for 40-45 minutes.
To test, put a wooden sticks in the cake, when no more dough gets stuck, the cake is ready.
Allow to cool for 10 minutes in the mold and then let cool on a grid.
Who likes sweets the cake with the glaze or dusted in with powdered sugar.
For the glaze, mix the icing sugar with lemon juice and pour over the cake.
