KOHLRABI RAGOUT
Ragout
2 kohlrabi, cut into sticks
2 carrots, cut into sticks
5 stalks of green asparagus, cut in half diagonally
2 sticks of spring onions, cut into rings
1 small bunch of fresh chervil, finely chopped
1 small bunch of parsley, finely chopped
100 ml cream, or plant based (soy or oat)
100 g sour cream, or plant based
1 tbsp lemon juice
salt and pepper

250 g flour
1/2 tsp salt
300 ml milk
100 ml sparkling water
4 eggs
1 small bunch of fresh chervil
1 small bunch of parsley
Ragout
Melt 1 tbsp butter and a pinch of sugar in a saucepan and add the small sliced vegetables. Steam until translucent and stir in 40 ml of water or vegetable broth, cream and sour cream. Cook over medium heat for about 10 minutes.
Season with salt, pepper and lemon juice and then stir in the fresh herbs.

Add the flour and salt in a big mixing bowl, add milk and sparkling water and finally whisk in the eggs. Add the chopped herbs.
Heat some oil in a pan and bake 8 pancakes one after the other.
Serve pancakes with kohlrabi ragout.
Tip 1: Serve with fried mushrooms.
