This post is also available in deutsch.Finally it´s strawberry season and we got our first local ones. Sweet, juicy and fruity. We bought a big bunch of it and decided to make with the half one a creamy and fluffy strawberry mousse.
We only need delicious strawberries, some sugar, (vegetable) cream and agar agar. For agar agar, it is best to read the package insert. Because some brands are differences.
Strawberry mousse
300 g strawberries
2-3 tbsp of sugar
250 ml cream, (also vegan)
200 g sour cream, (also vegan)
1 tbsp lemon juice
1 level tsp agar agar (corresponds to approx. 5 sheets of gelatin)
Wash, clean and puree the strawberries.
Whip the cream very well and mix with the strawberries and sour cream. Mix in the lemon juice and sugar.
Boil agar agar in 50 ml water with constant stirring for 2 minutes.
Take 3 tbsp of the strawberry mixture and stir under the agar agar. Then mix with the remaining strawberry cream.
Pour into a somewhat shallower bowl and let it set in the fridge for at least 4 hours.
Serve with strawberries and flaked almonds.
Info: Food made with agar will give off some liquid after some time. You can add a small amount of cornstarch to largely prevent this. Approx. 1 tsp cornstarch.
