WHAT DO I NEED FOR A GRANOLA?
- The base is usually rolled oats (also gluten-free) or spelt flakes.
- Different nuts: I always like to use almonds, pecans, walnuts, cashews, “coconut”
- Seeds e.g. sunflower seeds, pumpkin seeds, sesame, chia seeds, poppy seeds.
- Spices like cinnamon, vanilla, tonka bean, turmeric …
- Oil: coconut oil is the most suitable
- Sweeteners must not be missing: maple syrup, rice syrup, date syrup or agave syrup.
- dried fruits maybe there are: raisins, dates, apricots, figs, mango, physalis …


Homemade nut granola
2 1/2 cups rolled oats
1 cup mixed nuts I used pecans and almonds
1/2 cup quinoa flakes
1/2 tsp ground cinnamon
50 g pumpkin seeds
1/2 tsp salt
1/4 cup pure maple syrup
2 tbsp rice sirup
1/4 cup melted coconut oil
2 tsp vanilla extract
dried fruits
raisins
physalis
Preheat oven to 180°C.
In a large bowl, whisk oats, nuts, quinoa flakes, pumpkin seeds, salt and cinnamon together. Add oil, syrup and vanilla. Turn out onto a baking sheet and bake for 15 mins or until golden.
Remove from the oven and toss in the dried fruits (if using) while the granola is still warm. The granola will dry out and crisp up while it cools.
