What I need for pasta bake?
Pasta bakes are very popular and are usually made quickly.
- You need pasta and short ones are the best for casseroles, such as fusilli, farfalle, rigatoni, girandole, gemelli or torchietti.
- Then different types of vegetables zucchini, tomato, eggplant, carrots, mushrooms, fennel etc.. These are fried with onions, garlic and herbs (thyme, rosemary, oregano, parsley, fennel seeds, turmeric …).
- A delicious sauce: bechamel sauce, tomato sauce or a creamy vegetable sauce (pumpkin, cauliflower etc.)
- The ingredients are all mixed together and placed in a baking dish. Sprinkle with cheese and bake.
Brussels sprouts pasta bake with tofu
150g short pasta, like fusilli, girandole
250g brussels sprouts, quartered
150g broccoli
100g sugar snap peas, cut into pieces
2 spring onions, white part chopped / green in rings
1 small onion, cut in half rings
1/2 clove of garlic
4 tbspof olive oil
fresh nutmeg
pepper
sea-salt
a pinch of cane sugar
150g grated cheese
150ml oat milk
125ml water
50ml white wine
1 egg yolk
lemon zest
2tbsp spelt flour
90g smoked tofu, cut into small cubes
Clean and quarter the brussels sprouts.
Divide broccoli into small florets and blanch with the brussels sprouts.
Cook the pasta according to the package instructions al dente, drain and set aside.
sauce
Heat the olive oil in a saucepan add roast the garlic and white part of the spring onion. Add sugar, nutmeg, pepper and sea salt.
Then add 2 tablespoons of flour and roast. Pour with hot water, stir and add the milk.
Bring to the boil briefly and add the grated cheese, stirring constantly.
Add the onion rings and cook briefly.
Remove from the heat, season with lemon zest and stir in the egg yolk, set aside.
pasta bake
Mix the pasta with the blanched broccoli, brussels sprouts, sugar snap peas and the green part of the spring onion.
Put everything in a baking dish and pour the sauce over it. Sprinkle with the tofu cubes.
Place in the oven at 180 degrees and bake for approx. 30 minutes. Sprinkle with some grated cheese after 25 minutes.
Then bake for 10 minutes. Arrange on a plate and enjoy with a colorful salad.
Tip 1: also use other ingredients, such as green peas, green pasta, kale.
Tip 2: serve with a small salad.
Tip 3: Always use organic lemons.
Tip 4: use always good products. Your stomach thanks you.
Tip 5: when grating the lemon, make sure that no white portion is used. Otherwise it will be bitter
