Herb Crepes with red cabbage filling & green sauce

We lay in the heat, bathed in the sea and nibbled sweet figs from the tree. As if it was yesterday. It was so nice. And today it´s fall and we eat red cabbage with yummy herb crepes.

Herb crepes with red cabbage filling

dough
240 g of flour
300 ml oat milk
150 ml of sparkling water
1 tsp salt
1 bunch of parsley, finely chopped
1/2 bunch of fresh chervil if available, finely chopped
1/2 tsp turmeric
2 organic eggs
sauce
1/2 avocado
200 g yoghurt (vegan)
salt
1/2 bunch of dill
1 splash of lemon juice

Mix flour with oat milk, add sparkling water, salt, turmeric, (eegs) and herbs and stir until smooth. Set aside and let it swell for 10 minutes. The dough may be slightly thinner. If it is too thick, add more sparkling water.
For the red cabbage salad see recipe HERE. You can use white beans or kidney beans.
For the avocado sauce: Put all ingredients in a measuring cup and puree. Salt according to taste.
Bake pancakes in a pan with a little fat. By pivoting the pan, the dough is evenly distributed in pan.
Put the finished pancakes on a plate and keep warm in the oven.

Sprinkle red cabbage on the pancakes with the avocado sauce drizzle, collapse and ready.

Red cabbage salad

1 quarter red cabbage
1 tbsp raisins
1 tbsp chopped walnuts
1 tbsp cranberries
½ tin of kidney beans, washed up
1 orange
1 spring onion
dressing
½ spring onion, very finely chopped
½ tsp mustard
1 tbsp of apple vinegar
2 tbsp water
3 tbsp of orange juice
pepper
1/2 bunch chopped parsley
3 tbsp oil

Plane the red cabbage very finely (please pay attention to your fingers)
Place in a large bowl and sprinkle with 1 tsp salt and 1 tsp sugar.
Knead the cabbage with your hands (it is best to put on gloves because the cabbage is very colourfull). and let it rest for about 30 minutes.
Drain off the resulting liquid.
Mix the cabbage with raisins, nuts, cranberries and kidney beans.
Dressing: Mix ingredients.
Mix the dressing with the cabbage and let it rest for 10 minutes.

Ingredients

Pancakes

  • 240 g of flour

  • 2 tbsp water

I am sorry- I do not understand what a ‘bar’ of dill is. Is there another measurement (such as a teaspoon) that I can use?
