This post is also available in german/deutsch.Holiday mood and crunchy cauliflower nuggets with broccoli, not the worst idea. And these nuggets are super crispy, just what I need today. For the Nuggets use fresh cauliflower and broccoli, frozen food I think not so suitable for this recipes because the mass is otherwise too watery. Exceptions are the green peas.
Cauliflower nuggets with broccoli
150g cauliflower
150 broccoli
50 frozen peas, thawed and roughly mashed with a fork
1/2 bunch of parsley, chopped
85 g breadcrumbs
salt and pepper
20 g feta cheese
1 organic egg
also
more breadcrumbs for coating
Sunflower or rapeseed oil
Wash raw cauliflower and raw broccoli and divide into small pieces. Add in a blender and mix until roughly mixed.
Then add egg, spices, parsley and breadcrumbs in the blender and press the pulse function button 3-4 times. It shouldn’t be mush. Add the mixture in a bowl, mix in the feta cheese and peas.
The mass is easy to shape. If the mass is too moist, add some breadcrumbs.
Take off a good tablespoon, shape into patties and roll in breadcrumbs.
Heat the oil in a pan and fry the vegetable nuggets on both sides over medium heat until golden brown.
Serve with a colorful crisp salad, tomato sauce or avocado dip.
