This post is also available in german/deutsch.Once you get a taste of it, you don’t want to let it go. Make pasta yourself. It’s so easy and you need a maximum of 3 ingredients. Today’s recipe is about Handmade Spelt pasta. And to top it all off, we make fancy pasta with herbs and flowers. Not only does it taste wonderful, it also looks so pretty.
What kind of herbs and flowers
Edible and only the one you know.
Herbs: parsley, sage, basil, dill….
Flowers & blossoms: marigolds, rose petals, borage flowers (only the purple flowers), nasturtiums … ..
Handmade spelt pasta
4 servings
400 g spelt flour
4 eggs
2 tsp of olive oil
also
Sage leaves
edible flowers
parsley
Pasta machine
Put the flour on a work surface and make a hollow in the middle.
Beat the eggs and add them to the bowl with the oil. Knead the flour from the edge, starting with the eggs and the oil, until you get a homogeneous dough.
Knead vigorously for 5-10 minutes. If it is too dry, add a little olive oil. If it is too moist, tie it with some flour. In both procedures, apply sparingly. After kneading, wrap in cling film and let it rest in the fridge for at least 1 hour.
Divide the dough into 3-4 pieces and roll it out on a lightly floured work surface or with a pasta machine.
Remove the stems from the herbs and flowers and place on half of the dough. Place the second half of the dough on top and press firmly. If you moisten the edge, make sure that it’s just a hint, otherwise the dough will start to stick. Then turn the dough through the pasta machine again. Now cut into tagiatelle or ribbon pasta as desired. Dust the finished pasta immediately with a little flour and roll in it so that they do not stick together.
Cook al dente in plenty of salted water. Drain and serve with sauce or pesto.
You can also leave out the herbs or flowers.
Without egg
400 g spelt flour
250 ml water
Mix flour with water and knead into a smooth dough. Knead until the dough no longer sticks (5-10 minutes). The longer the better the result.
Wrap in cling film and proceed as described above.
