These muffins are made with wholemeal flour and make them even healthier. Greek yogurt for our proteins and beautiful ripe bananas for the sweetness.Healthy banana chocolate chip muffins
– preferably very ripe bananas
– sunflower oil, rapeseed oil or coconut oil
– coconut blossom sugar, brown sugar
– greek yogurt
– eggs or egg replacement
– wholegrain flour (or wheat flour)Banana Chocolate Chip Muffins
2 ripe bananas
130 g wholemeal flour
1.5 tsp baking powder
salt
1/4 tsp cinnamon
1 tbsp coconut sugar
1 tbsp brown sugar
1 egg
80 g Greek yogurt
80 g chocolate chip
30 ml of oil
Preheat the oven to 200 ° C. Lay out a 6-cup muffin dish with muffin paper.
In a bowl, mix flour, baking powder, salt and cinnamon.
Mix the eggs with sugar, yogurt, oil and crushed banana. Then add to the flour mixture and mix quickly. But don´t overmix the dough.
Finally, fold in the chocolate chip.
Put in the muffin molds and fill to the brim.
Bake in the hot oven for 15-20 minutes.
Allow the muffins to cool briefly in the mold and then cool on a wire rack.
