This fried rice contains lots of vegetables, spicy sauce and is ready in just under 30 minutes. Vegetables: You can also use the vegetables that are currently stored in your fridge. e.g. Red cabbage, paprika, leek, cucumbers and many more. The dish lasts for 3-4 servings and is also ideal as a meal prep over the week. Here I would thaw the peas and put separately in a tray in the lunch box. So the peas remain fresh and don´t disintegrate.Fried rice with vegetables
170 g rice
vegetables
2 green onions
2 carrots
1/2 broccoli
1/2 zucchini
1/2 cup frozen peas, thawed in water
seasoning
1 chili, chopped
2 garlic cloves, chopped
1 piece ginger, chopped
soy sauce
optional
1 onion, cut into strips
Scrambled eggs or tofu scrambled eggs
Sriracha
black sesame seeds
method
At first cook the rice according to the package instructions.
Chop vegetables in cubes and sauté in oil until crispy.
Put the vegetables (except the peas) in a bowl. Add spices to the pan and sauté. Add the rice and sauté occasionally. Put the vegetables back in the pan and mix with the rice. Now add the peas and the soy sauce.
Fry the onions in a pan with oil crispy.
Divide fried rice in bowls and serve with fried onions, scrambled eggs / tofu scrambled eggs and Sriracha sauce.
Season with salt, pepper and sesame.
