This post is also available in german/deutsch.Soft, cinnamony and incredibly addictive. I love these small yeast pastries. German cinnamon buns alias Franzbrötchen! A Hamburg specialty. They are similar to cinnamon rolls, but at the end the dough rolls are brought to their typical shape with a handle of a wooden spoon.
They are quite simple. The wooden spoon should have space left and right. Then they get a nice shape. You can make the Franzbrötchen also with coconut sugar, is not the original, but it tasted delicious. If you are not vegan, you can spread the buns with a beaten egg instead of butter.
Cinnamon rolls
Dough
450 g of all-purpose flour
50 g butter
200 ml of oat milk
1 packet active dry yeast
1 tbsp of cane sugar
pinch of salt
Filling
2 tsp cinnamon
100 g cane sugar
100 vegan butter soft
Instructions
Place the flour, active dry yeast and sugar in a large bowl. Melt butter in milk in a small saucepan. But only lukewarm.
Add milk to the flour mixture and work it to a smooth dough.
Cover the dough with a towel in a warm place for 1 hour.
Mix butter, sugar and cinnamon to a smooth paste.
Preheat oven to 200 degrees.
Place some flour on the work surface and roll the dough into a large rectangle.
Spread the surface with butter cinnamon mixture.
Roll the dough from the long side and cut the roll into 8-9 pieces.
Use the wooden spoon handle to press in (see picture above)
Brush with egg wash or butter and sprinkle with more cinnamon sugar mix.
Bake in the oven for 20 minutes.

I think it doesn’t work. Use the sugar of the whole dough.
Maybe you can use coconut blossom sugar or xucker (birch sugar).
