And then I thought to myself, let’s make a moist cherry banana bread out of it. Banana bread is always a great way to use ripe bananas. What´s you favorite recipe for ripe bananas?
Vegan cakes
First mix the dry ingredients together and the wet ingredients separately. Don´t stir vegan cakes too long, otherwise the cake will no longer rise. The apple cider vinegar should be added as late as possible because once it comes in contact with baking powder and baking soda, it will work and blisters will appear. And we want to keep it and not lose it.
Grease the pan or line it with baking paper and preheat the oven. It´s so easy isn´t it.

Cherry banana bread
3 overripe bananas
100 ml of oat milk
60 g sunflower oil
1 tsp vanilla extract
200 g of wheat flour
20 g coconut flour
1.5 tsp baking powder
1 tsp baking soda
1 tbsp apple cider vinegar
200 g cherries (frozen or well drained from the glass)

brown sugar
Loaf pan 20 × 10
Preheat the oven to 180 ° C and grease a loaf pan or line it with baking paper.
Mash the bananas with a fork to a fine purée and place in a bowl. Mix with milk, sunflower oil, vanilla and apple cider vinegar.
Mix the flour and coconut flour with the baking powder and baking soda, fold into the banana mixture and stir only until a homogeneous dough is formed. Then fold in the cherries (set aside 2 tablespoons).
Pour the batter into the loaf pan and cover with the remaining cherries. Finally sprinkle with brown sugar and bake for 40 minutes.
Test with a wooden stick whether the cake is ready.
Let cool in the mold for a few minutes and then leave to cool completely on a rack.
