This post is also available in german/deutsch.This creamy cauliflower potato stew with white beans and kale is ready in about 30 minutes, it´s quick, easy to make and full of fine flavors. After a nice walk through the farmers market we packed cauliflower, delicious kesse, herbs and carrots in the basket. So nothing stands in the way of a delicious stew.
What is the vegetable stew made of?
My favorite stew is always packed with vegetables from different families, but also other ingredients like beans or lentils.
- Legumes perfect for extra fibre, minerals and proteins – Lentils, chickpeas or cooked beans.
- Herbs for delicious flavors, vitamins and taste – parsley, dill, thyme, basil, cilantro.
- Basic Vegetables – onions, garlic, potato, carrots, celeriac, cauliflower.
- Spices – ginger, chili, turmeric.
How to make cauliflower potato stew
You basically simmer vegetables, spices in vegetable stock until everything is tender and all flavors are combined. Sounds pretty easy, here are some steps:
- Cut your vegetables
- Fry vegetables and spices
- Add vegetable stock or water
- Simmer on low heat for a delicious flavor
Cauliflower potato stew
1 large onion, chopped
2-3 cloves of garlic, finely chopped
1 tsp thyme
3 carrots, sliced
400 g cauliflower, divided into florets
2 potatoes, peeled and diced
200 g canned white beans
100 g kale, chopped
1 liter of vegetable stock ( 6 cups)
sea-salt
black pepper from the mill
1/2 bunch of parsley
Fry the onions and garlic in 2 tbsp of olive oil. Add thyme, carrots and sauté for 2-3 minutes on medium heat. Add in the vegetable stock, cauliflowers and potatoes. Simmer for 20-30 minutes until the potato are tender. Place 1/2 cups of the stew into a blender, process until smooth and return back to the stew. Add white beans and stir in the kale. Simmer on low heat for 3-5 minutes and season with salt and pepper.

Cauliflower potato stew with white beans & kale
Ingredients
- 1 large onion chopped
- 2-3 cloves of garlic finely chopped
- 1 tsp thyme
- 3 carrots sliced
- 400 g cauliflower divided into florets
- 2 potatoes peeled and diced
- 200 g canned white beans
- 100 g kale chopped
- 1 liter of vegetable stock 6 cups
- sea-salt
- black pepper from the mill
- 1/2 bunch of parsley
Instructions
- Fry the onions and garlic in 2 tbsp of olive oil. Add thyme, carrots and sauté for 2-3 minutes on medium heat.
- Add in the vegetable stock, cauliflowers and potatoes. Simmer for 20-30 minutes until the potato are tender.
- Place 1/2 cups of the stew into a blender, process until smooth and return back to the stew.
- Add white beans and stir in the kale. Simmer on low heat for 3-5 minutes and season with salt and pepper.
- Add chopped parsley and If you like, add cress too.
