I get the most inspiration for words + recipes when I’m outdoors in nature or walking through the weekly market and letting my thoughts run free.

Not much to say about this simple Asia cucumber salad. Just two ingredients and a decent dressing. Most of the time I’m sure that’s all we really need. Let it taste too.



Asia cucumber salad with soy coriander dressing
3 cucumbers
fresh leaves of cilantro
dressing
1 small red onion
1 tsp Dijon mustard
2 tsp maple syrup
1 tbsp rice vinegar
1/4 tsp chopped coriander seeds
1 tsp sweet soy sauce
3 tbsp sunflower oil
Wash the cucumbers and cut them into thin strips using a mandolin.
Finely chop or cut the onion and mix with the rest of the dressing ingredients.
Mix the cucumbers, coriander and the dressing and serve immediately. Season with salt.
Be sure to try this salad with cauliflower patties.
