Cherry Energy Balls with almonds and vanilla

There is still some way to cherry harvest, but these little energy balls anyway only need dried cherries, almonds and vanilla. If you had a down these energy balls bring your power back and they taste so delicious. These are the best snacks. Small, healthy and made from natural ingredients. Hope you like it.

Cherry Energy Balls 
Due the dried cherries, the Energy Balls get a slightly tingling touch that is reminiscent of shower sticks. I love sour and some bitter ingredients, because I prefer sometimes to pickles than to the chocolates. It should not be too sweet for me. And if there’s lemon in there, you’ve already got 90% on my side, hehe.

When I’m on the road I always like to have a small amount in my bag. As a result, I do not have to buy a trifle and I know what’s inside.

Cherry Energy Balls

These vegan energy balls do not require additional sugar and additives. Only dried cherries, almonds, dates, vanilla and a few pistachios.

Ingredients

  • 60 g of almonds
  • 15 g of pistachios
  • 100 g dried sour cherries see note *
  • 50 g dates
  • 1/4 teaspoon vanilla extract or vanilla pulp
  • 2 tbsp water

Rolling

  • sesame seeds

Instructions

  • Add nuts in a food processor and grind roughly.
  • Add cherries, dates and vanilla and pulse. Then mix at level 2, mix until a homogeneous and sticky mixture is formed.
  • If necessary, add 2 tablespoons of water.
  • Form into balls and roll in sesame.
  • Keep the Energy Balls in a tin or glass in the fridge.

Notes

  • You can roll the balls also in pistachios
  • I love this tiny food processor, it`s perfect especially for small amounts.
