Homemade Blackberry Pop Tarts

This post is also available in german/deutschHomemade pop tarts are one of my favorite things to make. Easy in handling and so good. Put your favorite jam or fruits like Apples in the middle. Or Chocolate and Peanutbutter. Stay tuned for more Pop Tarts coming soon! It starts with a buttery homemade pop tarts dough, which is basically pie dough. Then I used my favorite blackberry jam in the center, and finished it with an icing.

INGREDIENTS FOR BLACKBERRY POP TARTS

filling
300 g blackberries
1 tbsp corn starch
1 teaspoon lemon juice
70 g of sugar
dough
25o g flour
180 g butter, cold and cubed
2-3 tbsp cold water
2 tbsp sugar
glaze
150 g powdered sugar
1 Tbsp lemon juice
Edible flowers

METHOD

Mix the ingredients for the filling in a saucepan and simmer gently for 5 minutes. Allow to cool completely.
Put the dough ingredients in a bowl and quickly strain into a smooth dough. Form dough into 2 equal sized disks and wrap each with plastic wrap. Place in fridge for at least 1 hour, but up to 2 days.
Remove one of the doughs from the fridge. Place a large piece of plastic wrap over a work surface, then sprinkle flour over it.
Also flour a rolling pin. Working quickly, roll the dough out into a 10″x13″ rectangle.Using a ruler and a long knife, cut your dough into a perfect 9″x12″ rectangle.
Then, cut your rectangle into 9 equal pieces, each 3″x4″.
Place the filling on half of the rectangles in the middle but not too close to the edges.Place the remaining dough over the filling of the pop tart. Press down on the edges slightly to seal the dough together.
Then, using a fork, create indentations around the entire pop tart.

Bake in the oven for 25 minutes.
Place on a grid and allow to cool.
Mix icing sugar and lemon juice and pour over the blackberry pop tarts.
Who likes sprinkles them with edible flowers.Tip: For starters, I suggest making the pop tart dough the night before. Let it rest in the fridge, and take it out once you’re ready to get baking.
