This post is also available in german/deutschHello my friends. While spring has taken a little break, I will share with you a delicious spring snack. I went grocery shopping and I found these yummy flatbreads and I had to take them with me immediately. You can also use pita, naan or even Turkish flatbread. These ones was perfect for the toaster.White Bean Hummus
Some people are allergic to chickpeas, today I just made a delicious and creamy white bean hummus. It contains as many as healthy proteins, vitamins and fiber. So it’s a great alternative to chickpea hummus.
For storage, it´s best to place in a container and cover with olive oil. Place in the fridge, the bean hummus stays longer fresh. It should be used up within 2-3 days.
White bean Hummus
1 large can of white beans (drained weight 480 g)
50 ml extra virgin olive oil
50 ml lemon juice (about 1 large lemon)
1 clove of garlic (of course more if you prefer)
Salt and black pepper from the mill
also
4 flatbreads (like Pita)
1 bunch of white asparagus
1 bunch of green asparagus
5 radishes
4 soft-boiled eggs of happy chickens
fresh dill
Handful of baby spinach
olive oil
black sesame
chilli flakes
Bean Hummus
Wash the beans and drain. (Save bean water for Aquafaba sweets). Add white beans, olive oil, lemon juice and garlic in a food processor and mix until smooth. If necessary add 2 tbsp of water. Season with salt and pepper. Put in a bowl and set aside.

Peel the asparagus and slice into thin strips or cut finely. Fry in a pan until crispy. Add the quartered radishes 2 minutes before the end and sauté. Roast flatbread in the oven / pan or in the toaster and spread with white bean hummus. Add asparagus, radishes on the flatbread and garnish with eggs, spinach and fresh dill. Season with spices and drizzle with olive oil.

- 1 large can of white beans drained weight 480 g

Instructions

- Season with salt and pepper. Put in a bowl and set aside.

- Toast flatbread in the oven / pan golden brown or in the toaster. Spread with white bean hummus onto the flatbreads and top with asparagus, radishes and garnish with eggs, spinach and fresh dill. Season with spices and drizzle with olive oil.
- Enjoy your healthy snack.
