This post is also available in german/deutschHi friends. It´s time for another Pop Tart recipe. This little hand pies are so good and you will have a lot of fun in the kitchen. Start with the dough, If you like you can make it on the evening before. Put the dough 20 Minutes before using out of the fridge so you can better handle it.The pasty is super easy. You can use your hands, a food processor or a pastry cutter. You can use different kind of shapes. You can make heart shapes, circle, stars, triangle or whatever you like.
Strawberry Pop Tarts
dough
250 g flour
2 tbsp sugar
180 g cold butter, vegan
3 tbsp cold water
filling
8 tbsp strawberry jam
1 teaspoon lemon juice
1 tbsp starch
frosting
60 g of powdered sugar
1 teaspoon lemon juice
1 tbsp water
2 tablespoons of strawberry juice or 3-4 strawberries finely pureed
Filling
Mix the strawberry jam, lemon juice and cornstarch together until everything is evenly distributed.

Knead dough ingredients quickly together. Shape the pie dough roughly into a rectangle (if needed, knead it slightly – but don’t overwork it!), wrap it into cling film and refrigerate for at least 1 hour.
Preheat the oven to 180 ° C.
Roll out the chilled pie dough about 3 mm thick, and cut out 3 x 4 inch rectangles. You should get 16 rectangles (makes 8 pop tarts).
Half the edges with oat cream and spoon a heaped tablespoon of the jam filling into the centre of each one. Spread the filling slightly, but leave at least 3/4 inch room around the edge.
Prick the centres of the other 8 rectangles with a toothpick. Place these rectangles over the filling, seal the edges with your fingers and “crimp” the edges with a fork.
Bake in the oven for 25 minutes.
Place on a grill and let cool.
Mix frosting ingredients together. Spread the strawberry frosting onto the slightly cooled pop tarts and decorate with sprinkles of choice.
