Quinoa Sweet Potato Patties

This post is also available in german/deutschWhat do you thinking of quinoa? If you are one of those who love quinoa, then today you are exactly right with Klaraslife. And the others may of course also enjoy these tasty quinoa sweet potato patties. Moist and crispy in one. 
Quinoa sweet potato Patties
1 small sweet potato (220g)
110 g of colorful quinoa
1 spring onion
1 handful parsley
2 eggs from happy chickens size. S
a piece of ginger, hazelnut size
2 tbsp of yeast flakes
1/2 tsp Garam Masala
1 tbsp oil
7 tbsp breadcrumbs

Wash quinoa and place in a saucepan. Cover with plenty of salted water and simmer gently for 20 minutes.
Put in a sieve and drain well.
Roast the sweet potato in the oven until soft, or place it in water and cook in the microwave for about 5-6 minutes.
Chop parsley and onion roughly and place in the food processor. Sweet potato peel and cube.
Add eggs, spices, 3 tbsp of quinoa, sweet potato, ginger, yeast flakes and oil. Now mix with the pulse function to a pulp. Put in a bowl and mix with the remaining quinoa and breadcrumbs.
Keep cool for 20-30 minutes. Should the mass be too moist add more breadcrumbs. But the mass shouldn’t be too dry. Sometimes make a test pattie and bake, so you can quickly see if the consistency right.

Form the patties and sauté them in a pan with oil from both sides to medium temperature until crispy (each side about 2-3 minutes). Only turn around if one side is well fried.
Serve with a colorful salad and sriracha sauce.

Quinoa sweet potato Patties

These crispy Quinoa Sweet Potato Patties are healthy and delicious. You can use the patties also as burger patties or you enjoy it with a big colorful salad.
