Between sweet linzer cookies, walnut cookies with chocolate ganache and hilda cookies, we pack a few savoury poppy seed cookies in between. Made from whole wheat flour, poppy seeds, olive oil and thyme. These cookies go well with a cheese platter, with olives, sweet pears and grapes.

Savoury poppy seed cookies
160 ml of lukewarm water
1 tsp dry yeast
1 tsp of sugar
240 g whole wheat flour
2 tbsp poppy seeds
1/2 tsp thyme
1/2 tsp salt
5-6 tbsp olive oil
coarse sea salt for sprinkling
Mix the water, yeast and sugar together and let stand for 5 minutes. Mix the flour, poppy seeds, thyme and salt in a bowl.
Then add the oil and yeast mixture, mix and knead the dough for 5 minutes. Add more flour if necessary. Place the dough in a lightly oiled bowl, cover and let rise for 30 minutes.
Preheat the oven to 180 ° C.
Roll out the dough about 1 mm thin on a lightly floured work surface and cut out cookies.
Brush the cookies thinly with oil and sprinkle with the coarse sea salt.
Bake in the oven for 12 minutes and leave to cool on a kitchen rack.
