Plum crumble bars with buckwheat
Ingredients
- 200 grams of flour
- 90 g buckwheat flour
- 100 g brown sugar or coconut blossom sugar
- 1 teaspoon Baking powder
- 135 g butter
- 1 egg
- 1 teaspoon cinnamon
filling
- 400 g plums
- 160 g plum jam
- 1 tbsp starch
- Lemon juice
Instructions
- Line a baking pan with parchment paper. Put the flour, buckwheat, sugar, baking powder, cinnamon, butter and egg in a food processor / mixer and process into a crumbly batter. As an alternative, you put the ingredients in a bowl and knead it with your hands. Put aside.
- For the filling, the plums, core and quarter. Mix together with the jam, lemon juice and starch, place in a saucepan and simmer for 20 minutes. Allow to cool slightly. Preheat the oven to 180 ° top and bottom heat.
- Press 1/2 of the dough into the baking pan, spread the plum filling on top and finally pour the remaining dough over it. Bake in the oven for 35-40 minutes.
- Let cool completely in the mold and then cut into 8 pieces.
