Madeleines | sweet and fluffy french treats

This post is also available in german/deutsch.MadeleinesToday I share with you these madeleines recipe! Recently I am the proud owner of a madeleine baking pan! Ohh I’m so happy about it. Now there are finally homemade madeleines and of course I got to work straight away. I love baking and could bake new cakes, tartlets or cookies every day. There is nothing like sweet good-quality sweets.

Flour, sugar, eggs, baking powder, butter, vanilla and lemons. Everything is in our pantry. Lets start.

Madeleines

Madeleines
120 g flour, sieved
1/2 tsp baking powder
115 g of butter
2 organic eggs, room temperature
80 g of sugar
Lemon grind of half an organic lemon
1/4 tsp vanilla powder
pinch of salt

Melt the butter in the microwave or on the stove. Set aside, so the butter can cool in the meantime a little. It may be too hot.
Now put the eggs and the sugar in a mixing bowl and use the food processor (easier) or hand mixer
Beat very frothy for 8 minutes at high speed. At the end, add the vanilla and the lemon rind.
Mix flour with baking powder and salt.
Now use a spatula to gently lift the flour under the egg-sugar mass. Do not move around wildly, important!
When everything has been made into a homogeneous mass, stir 3-4 tbsp of the dough into the melted butter.
This can take a minute to get everything connected. Then add everything to the rest of the dough and stir. The dough is thick and shiny.
Put in the refrigerator for 40 minutes. Pre heat the oven to 180 degrees celcius. After the resting phase, the dough is nice and frothy.
Grease Madeleine shape. Pour 1 tablespoon of the dough into each pan (do not smooth) and bake for 11 minutes. Keep the remaining dough cool. The Madeleines are ready when the dough jumps back after a finger pressure.
Dust the ready-cooled Madeleines with powdered sugar and enjoy.
