Who will be king or queen among you? Traditionally, we always have the King Cake on December 6th. This is a fluffy, moist and sweet yeast dough. I baked it with spelt flour and you don’t need any animal products. So also ideal for your veganuary.
King Cake
500 g light spelt flour, type 630
60 g of sugar
1 packet of dry yeast
100 g vegetable butter, soft
260 ml oat milk, lukewarm
50 g raisins or baking chocolate chips
1 almond
also
3 tbsp almond flakes
2 tablespoons of granulated sugar
3 tbsp soy cream
Put the flour, sugar, and yeast in a large mixing bowl.
Then add the milk, butter and raisins.
Then we knead the dough with the dough hook of the food processor for about 5 minutes.
Then cover with a kitchen towel and let rise in a warm place for 1 hour.
Now put the dough on a lightly floured work surface. To portion the dough, we need 8 small balls of the same size and one larger ball.
Now pick one ball and hide the almond in it.
The large ball goes in the middle of the baking sheet and the small ones are distributed around it with a little space.
Preheat the oven to 180 degrees.
Brush the cake with soy cream and sprinkle with flaked almonds and granulated sugar. Then let rise for another 15 minutes.
Now bake on the middle rack for 25-30 minutes until golden brown.
