Warm and cosy for your inner well-being.
Kale & Sweet potato stew
1 big sweet potato, diced
2 onions, finely chopped
2 garlic cloves, finely chopped
2 carrots, diced
200 g of white beans, (can)
1 can of chopped tomatoes (400 g)
1 small zucchini, diced
5-6 Fried peppers (Pimientos), quartered + stalk set removed
100 g of kale, cleared from thick sticks, roughly chopped
1/2 tsp turmeric
1/4 tsp cinnamon
1/4 tsp. Cumin
1/2 tsp of freshly ground coriander seeds
1 small medium hot chilli pepper
3 tbsp olive oil
80 g of rice, prepared according to the package instructions
Fry the onion and garlic in olive oil. Add spices and sauté briefly.
Then add carrots, sweet potatoes, zucchinis and roasted peppers and sauté for about 5 minutes.
Add chopped tomatoes and cover with water. Boil (about 500 ml) and then simmer for 25 minutes.
Add the beans after 10 minutes and fold in the green juice shortly before the end.
Salts and peppers.
If you like serve your stew with rice.
