This year we filled them with homemade punch jelly. Otherwise they also taste super delicious with red currant jelly.
Short pastry / cookie dough
The cookie dough is made from flour, butter, sugar and egg yolk. With a bit of spices and ground almonds, the dough can be varied a bit and you get super delicious cookies. The dough is ideal for apple pie or cheesecake too.
Easy jelly Thumbprints
These cookies are so easy to make and really fun. When you have kneaded the dough and it has rested, roll into balls. The balls shouldn´t be too big, a size of one teaspoon is great. When the balls are rolled, using your thumb or the end of a spatula, make an indent into each cookie. Then bake and fill the cooled thumbprints with jelly or jam. Mhhh delicious!
How to Make Thumbprints
- Mix the dough ingredients together.
- Roll balls of dough. Use a 1 Teaspoon of dough for each.
- Indent each cookie.
- Chill the indented dough.
- Bake.
- Cool.
- Fill with jelly.
Easy jelly thumbprints
140g spelt flour (Type630)
100g butter, room temperature
40g sugar
1 tsp vanilla extract
1/2 tsp cinnamon
1 egg yolk
40 g blanched almonds, ground
2 tbsp icing sugar
100 g punch jelly or other red jelly
For the dough, knead flour, butter, sugar, vanilla extract, cinnamon, egg yolk, almonds and 1 tablespoon of cold water with the dough hook of the hand mixer to a crumbly dough. Then knead with your hands to a smooth dough. Wrap the dough in cling film and chill for 2 hours.
Preheat the oven to 180 ° C.
Roll balls of dough, 1 Teaspoon for each. Place dough balls onto a large lined baking sheet. Using your thumb or the end of a spatula, make an indent into each cookie.
Bake the cookies for 10 minutes remove from the oven and allow cookies to cool completely. Dust with powdered sugar and spoon 1/2 teaspoon of jelly into each indentation.
