Dutch baby
2 eggs from happy chickens
100 ml almond milk
35 g of coconut blossom sugar
60 g all purpose flour
1 tbsp butter
apricots
1-2 tbsp sugar
5-6 apricots

Cast iron pan 20 cm
Preheat the oven to 220 ° C.
Whisk eggs, sugar and milk and fold in the flour. The dough is pretty fluid but that’s okay.
Add the butter to the pan and let it melt in the oven.
Put the dough in the pan and bake for 10-15 minutes.
In the meantime, remove the stone of the apricots and cut into slices.
Caramelise the sugar in a small pan and add the apricot slices. Sauté briefly and then remove from the heat.
Remove the Dutch baby from the oven, cover with the apricots and who likes to serve with powdered sugar.
