After a cup of coffee and a pretzel, Ramin and I go over the farmers market together and put every treat that crosses our path into our basket. Cauliflower, carrots, parsley, dill, local apples and sweet juicy golden yellow pears.
Since this year I have become a real pear fan and don´t get enough of them. On top of that, they are also super healthy, rich in vitamins and contain the important mineral boron. This is relevant for the organism to store calcium. So grab the pear more often.
Since today is a late summer day and the sun is still shining from the sky, there is something light for lunch today. We made cauliflower patties with salad.
Cauliflower patties
170 g quinoa
500 g chopped cauliflower florets (2 cups)
475 ml vegetable broth
1 cooked potato (150 g), mashed
small bunch of parsley, finely chopped
1 small shallot, chopped
Zest of 1/2 lemon
2 eggs
2 tbsp ground flaxseeds
salt
black pepper
Oil for frying
Combine the quinoa, cauliflower and broth in a medium pot and bring to a boil. Reduce heat to low, cover and cook for 15-20 minutes until the water has evaporated and the quinoa and cauliflower are soft. Smash with a spoon until creamy. Transfer to a bowl with the remaining ingredients and mix until combined. Chill for 10 Minutes.
Heat oil in a large skillet over medium high heat.
Form the quinoa, cauliflower mixture into a patties and fry until golden brown on both sides.
Serve with cucumber salad.

- 1 small shallot chopped
- Zest of 1/2 lemon
- 2 eggs
- 2 tbsp ground flaxseeds
- salt
- black pepper
- Oil for frying

- Combine the quinoa, cauliflower and broth in a medium pot and bring to a boil.
