Homemade Bagels

Hello. If you know me you know I love fresh baked bread or buns. I´m a german girl and I love bread. Today I will show you an easy way to create your own baked homemade Bagels. Yay!! You will wonder how simple it is. Okay let`s start.

Bagels

We need flour, butter, milk, salt and yeast. And seeds for the topping. Here you can pick your favorite ones. I love sesame, but also poppy seeds. You can also mix the seeds. Sunflower seeds, pumpkin seeds, black sesame, coriander or hemps seeds. All what you love. Its your bagel.

500 g wheat flour
4 g of salt
21 g fresh yeast
20g softened butter, vegan
270 ml of plant based milk
pinch of sugar
Sesame, poppy seeds, sunflower seeds or pumpkin seeds

Put the flour and salt in a bowl. Warm the milk lukewarm and add the butter and the yeast. Stir and add to the flour in the bowl. Knead to an elastic dough. Form a ball and let it rest covered in a warm place for 30-40 minutes.
Preheat oven to 220 ° C.
Bring salted water to a simmer in a large saucepan. Divide the dough into 5-6 equal pieces.
Form into balls and press your index finger through the center of each ball or use a wooden spoon. (Look here)
In circular movements expand the hole and form into a ring. Put 1-2 bagels in the water for 30 seconds, bring them out with a foam trowel and drain a little bit, put them on a baking sheet.
Brush bagels with egg wash or soy cream and dipping into the seeds / grains.
Bake until golden brown for 22 minutes.
Let the bagels cool down a bit and then cover with avocado, watercress, many fresh herbs, tomatoes, (vegan) crumble egg or enjoy with home-made jam.
The bagels taste fresh best. Otherwise, freeze and thaw in the toaster again.

Hi Klaira, I’m interested in your recipe with using butter and plant-based milk. I’ve been using barley malt syrup and water, proving the dough overnight to add more flavour. Next time I’ll try your recipe though and see what difference it makes.
