Generally don´t over the donut dough or vegan dough too much. Because he loses his looseness. When the dough is ready for the donut pan here’s my trick for easy and clean working: simply spoon it into a large zipped-top bag and pipe it into the donut pan through a little corner you’ll cut out. It´s sounds weird but it´s so easy!
The ready-baked donuts are a bit difficult to remove from the mold?
Always grease well and after baking allow to cool for 2-3 minutes in the pan. Turn the pan over and possibly release it with a light tap.
Banana Donuts
125g all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp dark brown sugar
40 g melted butter, slightly cooled
2 mashed bananas
1/2 tsp pure vanilla extract
30 ml oatmilk
Dark Chocolate Glaze
90g dark chocolate chips (vegan)
30g butter (vegan)
1 tbsp rice syrup
2 tbsp water
Preheat oven to 180°C. Spray a donut pan with non-stick spray. Set aside.
Make the donuts: Whisk the flour, baking powder, baking soda, salt and cinnamon together in a medium bowl. Set aside. Whisk sugar, butter, mashed banana, vanilla, and oat milk until smooth and combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Don´t overmix.
Spoon the batter into the donut cavities.
Bake for 9–10 minutes until lightly browned. Allow to cool for about few minutes and transfer to a wire rack. Bake the remaining donut batter (there is enough batter for 2-3 more donuts).
Make the glaze: Place the chocolate chips, butter, syrup, and water in a medium bowl. Melt over water and stirring each time, until completely melted and smooth. Dip the donuts into the chocolate glaze. And If you like top with white chocolate.
