When you bananas get´s freckles it´s time for a delicious and healthy chocolate banana bread or chocolate banana muffins. They are moist and fluffy. And you don´t need extra sugar.
Ingredients for egg free Banana Chocolate Muffins
250 g self raising flour
125 g spelt flour
3 tbsp cocoa powder
3 mashed bananas
1 tbsp peanut butter
120 ml vegetable oil
220 ml oat or coconut milk
3-4 tbsp coconut sugar
1 tsp cinnamon
60 g dark chocolate chunks
Mix 1 tbsp baking soda with 1 tbsp vinegar (egg replacement)
Preheat the oven to 180 °C. Line muffin tins with paper cases.
Place flour, cocoa powder, cinnamon, gingerbread and sugar in a bowl and mix to combine.
Mix banana with peanut butter.
Add milk, oil, banana, chocolate and egg replacement, and mix until just combined.
Spoon the mixture into the tins and bake for 25 minutes.
Allow cool in the tins and transferring onto wire racks.
Enjoy it and these are also a sweet treat for Christmas. Kathrin

Notes
- If you want to make a banana bread add the dough in a baking tin form.
- Bake for 30-40 minutes
