Green Honshu Soup with rice noodles, tofu and vegetables

This post is also available in german/deutschgreen honshu soupThis green honshu soup is very fine and consists of fresh, barely cooked ingredients.
This preserves many vitamins and nutrients. The preparation is very easy and above all fast. It tastes both in summer and in winter. In the seasons in between, of course, too.
The base of the soup is based on the core of the Japanese cuisine. The ingredients are freely chosen and don´t follow an original Nippon dish.

When enjoying you should be able to taste the individual ingredients clearly.
So we stay here close to the original taste. There is no feeling of fullness and so you can just prefer to eat a second bowl.

0.5 l of water
1 tsp sesame oil
1 tbsp sunflower oil
1 tbsp miso paste
3 tbsp soy sauce
40 g fresh spinach leaves
200 g smoked tofu
125 g rice noodles
2 green (spicy and long) peppers
1 half cucumber
200 g broccoli
fresh coriander
salt

Pour noodles and broccoli with boiling water and let it grow for 10 minutes.
Clean all other ingredients. Dice tofu.
Mix miso paste with hot water, add soy sauce and maybe salt.
Peel cucumbers and sauté in the two kind of oils. Remove the cucumbers, then add the miso sauce and remove from the heat.

Put all ingredients of the green honshu soup in a bowl and pour over the hot broth.
Bon appetit and Sayonara.

  • 40 g fresh spinach leaves
  • 200 g smoked tofu

  • 2 green (spicy and lonpeppers
  • 1 half cucumber
  • 200 g broccoli
  • fresh coriander
  • salt

Instructions

  • Pour noodles and broccoli with boiling water and let it grow for 10 minutes.
  • Clean all other ingredients. Dice tofu.
  • Mix miso paste with hot water, add soy sauce and maybe salt.
  • Peel cucumbers and sauté in the two kind of oils. Remove the cucumbers, then add the miso sauce and remove from the heat.
  • Put all ingredients of the green honshu soup in a bowl and pour over the hot broth.
  • Bon appetit and Sayonara.
