Pear and almond cake with tonka bean

The nice thing about baking is not only the delicious taste, but also the wonderful scent of spices that permeates the whole home. Today we decided on the following ingredients: pear, almonds, cardamom and tonka bean. Yummy!! All ingredients go well together, you will definitely love the pear and almond cake as much as we do. Enjoy it.

Pear and almond cake

80 g ground almonds
100 g corn starch
240 g all flour or light spelt flour
1 tbsp baking powder
1 tsp baking soda
pinch of salt
1/2 tsp cardamom, ground
1/4 tsp tonka bean, ground
90 g coconut blossom syrup
250 g ripe pear
240 ml oat drink
120 ml sunflower oil
1 tbsp apple cider vinegar

Preheat the oven to 180 ° C top / bottom heat.
Grease a baking pan and set aside.
Put the almonds, cornstarch, flour, baking powder, baking soda, salt, cardamom and tonka bean in a mixing bowl and mix well.
Peel and core the pear and cut into cubes.
Put the pear cubes, coconut blossom syrup, oat drink, sunflower oil in a second bowl or a measuring cup and puree finely with the hand blender.
Then fold the liquid into the flour mixture until no more flour is visible. Finally mix in the vinegar.
Now put the dough in the baking pan and bake for 30-40 minutes.
Use a wooden stick to check whether the cake has been baked.

Let cool briefly in the mold and then let cool completely on a rack.
Dust with powdered sugar and enjoy.

    Tonka beans are illegal in the US. What can I substitute? Your website is beautiful!

      You can use 1/4 tsp almond extract and 1 tsp vanilla extract.
