Delicious Lemon Poppyseed Muffins

These muffins are guaranteed to brighten your day. Beautiful lemon poppyseed muffins with powdered sugar or maple sirup and of course fresh berries!

Lemon Poppyseed Muffins

INGREDIENT LIST FOR CITRONS MOHN MUFFINS:

Dry ingredients: 210 g flour, 1 1/2 teaspoon baking powder, 1/2 tsp baking soda, 2 tbsp poppy seeds, pinch of salt

Wet ingredients: 2 eggs or egg replacement, 80g-100g sugar, 2 tablespoons lemon juice, zest from 1 lemon, 100 g melted butter, 200 ml vegetable milk or kefir

PREPARATION:

Preheat the oven to 180 degrees. Line a 12 cup muffin tin with muffin liners. Mix all dry ingredients. Mix all wet ingredients together. Stir both together, but don`t over mix. Divide batter evenly between the 9 -12 prepared muffin cups. 

Bake in the oven on the middle rack for 18-20 minutes or until test comes out clean. Let cool on a grid.

Use egg replacement, like apple sauce oder flax egg
